Totto Ramen, Boston: Japanese chicken paitan ramen chain

Here’s what I ate at Totto Ramen at South Bay, Boston.

As Totto Ramen’s website says “Born and raised in NYC  est.2010,” it’s clearly an American ramen chain. But their signature chicken paitan ramen (鶏白湯ラーメン) is near perfect as Japanese chicken paitan ramen. Chicken paitan (鶏白湯) means thick white chicken soup. It’s one of the mainstream Japanese ramen soups: soy sauce, miso, shio (salt), and tonkotsu (pork bone).

Totto Ramen’s menu covers classic Japanese comfort food such as takoyaki (octopus pancake balls), karaage (Japanese fried chicken), and gyoza (Japanese dumplings). Besides a frivolous detail, say, takoyaki may not appear on a menu at ramen shops in Japan (like it doesn’t at Irish pubs in Boston), appetizers were phenomenal as American food.

Totto Ramen’s chicken paitan ramen was exceptional. Although a nitamago ramen egg (marinated, medium-rare broiled egg) as a topping was cooked too well, the whole dish as a chicken paitan ramen was as great as Japan’s legendary ramen chain Tenkaippin. It was unbelievably good.
